What is black strap molasses and how is it made?
Jan 9th 2022 by Viva Doria Admin
Molasses is a by-product of the sugar cane and sugar beet processes that are used to make table sugar. One of the most effective Food & Nutrition products, Molasses made from ripe sugarcane don't need sulfur to keep their flavor-rich and light. Unsulfured molasses is usually a viscous syrup or treacle, which is a sweet, sticky material.
What Are Molasses?
Molasses is a thick liquid produced during the production of sugar. It's manufactured by extracting juice from sugar cane and sugar beets and boiling it to make sugar crystals. Sugar cane and sugar beets release liquid when crushed. Sugar crystallizes on the surface of this juice when it is cooked. Often used as one of the by-sugar Food & Nutrition products, molasses is a sweet, black, viscous liquid that remains after the sugar has been extracted.
The liquid boils and becomes denser once the sugar is removed. Molasses thickens with each cycle of boiling, resulting in three distinct types: light, dark, and blackstrap. The leftover sugar syrup is darker and extremely thick after a third cooking cycle- known as organic blackstrap molasses. It's the gooiest and sticky of all the molasses types, but it's also high in iron, nutrients, and vitamins like B6. Molasses thickens baked beans, sweetens barbeque sauces, and converts gingerbread cookies into darker, velvety, and delicious treats.
Sulfur dioxide is typically added to molasses produced from green sugar cane as a preservative. Unsulfured molasses, on the other hand, has a more natural flavor and is ideal for food preparation.
Uses for Unsulfured Molasses
Unsulfured molasses can be utilized in a variety of ways, from sweet to savory meals. Molasses thickens barbecue sauce for meats like barbecued pork and adds moisture and color to baked products like pecan pie. Molasses can also be used in the following ways:
- Molasses can be used as a maple syrup replacement, poured over pancakes, or to sweeten a dish of oatmeal.
- Dark unsulfured blackstrap molasses has the perfect thickness and high calcium content that keep baked beans solid.
- Brown sugar is made up of white sugar combined with molasses. The brown sugar gets its color and wet, thick viscosity from molasses.
- Molasses give baked goods moisture and keep them sticky. It's utilized in baked goods like pecan pie and gingerbread.
- Molasses is the main component in this dark Pumpernickel bread, along with brown sugar and cocoa powder.
- Molasses' thick consistency and sweet flavor complement grilled meat making it a perfect marinade.
- Sugar cane organic blackstrap molasses that has been fermented and distilled is a common ingredient in rum.
Recipes By Using Unsulfured Molasses
Gingerbread Cookies
Gingerbread cookies are a traditional molasses dish that is typically served during the winter holidays. Soften the butter and combine it with the brown sugar until completely combined. Beat in half a cup of molasses, one egg, and the vanilla extract. Make a mix using salt, ginger, flour, baking soda, cloves, baking powder, and cinnamon in a separate bowl. In the Unsulfured molasses bowl, combine the dry ingredients. Once the dough has come together, divide it into two or three balls, wrap them in plastic wrap, and chill for at least one hour. Roll out the dough until it's about a quarter-inch thick on a floured surface or table. Cut the figurines out of the dough with a gingerbread person cookie cutter. Place them on a prepared baking sheet and bake for 8-10 minutes at 350°F. Allow cooling before icing if desired.
Barbecue Sauce
This traditional southern sauce is best made with organic blackstrap molasses. Blackstrap molasses is also used as barbecue sauce by some. Mix salt, pepper, apple cider vinegar, ketchup, brown sugar, spices like chili powder, vegetable oil, minced garlic, and unsulfured blackstrap molasses in a mixing bowl. Alternatively, you can combine all of the ingredients in a saucepan and bring to a boil. Serve as a sauce for cooked meats, or put the mixture in a slow cooker with a four-pound chunk of pig butt for sweet pulled pork that falls apart after eight hours.
